Once a month, I get together with a group of girls. It is time to gossip, share wine and eat yummy food…all while in the company of amazing women and moms. We always share advice and catch up on our hectic lives.
This past month, the girl’s night was held at my house. With trying to stay healthy, I decided I would throw together some salads. I didn’t want plain, boring salads, so I went and checked out 30 Day Salad Swap from Fresh Express. The idea is that if you are craving something unhealthy, they can show you a healthy alternative.
The site is full of recipes, so trying to narrow it down to a couple proved to be difficult. I finally decided on 2 salads and a dip (who needs to be 100% healthy?).
The first one was a Red, White and Blue Pear Gorgonzola Salad. It was full of blueberries, strawberries, pears and gorgonzola (in case you didn’t gather that from the title) and topped with a raspberry vinaigrette. And it is only 270 calories a serving, woohoo!
The second salad I made was Salad with Creamy Pasta. This was a spin on Chicken Alfredo. This would be a great dinner option, as it is filling..and delicious.
With both salads, I halved the recipe and still had leftovers. And Fresh Express does come in a single serve portion size that would be perfect to throw together a small version for week-day lunches.
I also made a Spicy Southwest Spinach Dip. I picked this just to try something different. The recipe sounded…interesting. I really didn’t think it would turn out. But, this is officially my new favorite dip. Once again, I halved the recipe…and left out the jalapeno because I don’t like things too spicy. It was amazing. Try it.
