hello all – I’m chelsea from little lessons in a big city. and I’m here to
entertain distract you while kristin is on vacation. I thought the best way to achieve that would be to create something sweet, chocolaty, and fall-inspired.
If you can’t be on vacation, you should at least be cuddled up on the couch. possibly watching a movie. and definitely snacking on some cozy peanut butter popcorn. because it screams comfort & fall. [in addition to being delicious].
did I mention it’s simple to make?
all you need is:
• 8 cups of popcorn.
• 1/2 cup honey.
• 1/2 cup granulated sugar.
• 3/4 cup peanut butter.
• 1 teaspoon vanilla extract.
• 3 squares almond bark [I used white, and added food coloring to turn it orange].
• 1 cup mini peanut butter cups.
in a small saucepan combine honey + sugar. bring to a boil. reduce heat & simmer for two minutes.
remove from heat. add peanut butter + vanilla.
drizzle over popcorn. and stir to combine.
create a double boil to melt almond bark.
add red + yellow food coloring to create a fall-appropriate orange color.
spread popcorn on a cookie sheet topped with parchment paper.
drizzle orange almond bark. and let cool.
toss with mini peanut butter cups. and you have yourself a delectable fall treat. perfect for a cozy movie night, in front of a warm fire.
